ingredients
- 2 tablespoons of olive oil
- 1 small onion
- 1 clove of garlic
- 1 tomato
- ½ zucchini
- dried basil
- 30 g of spinach
- 20 g of mushrooms
- 70 g of shrimp
- 50 g quinoa
Preparation
Chop the onion and garlic. Cut the tomato into small cubes. In a saucepan, put the onion, garlic and tomato with a splash of olive oil and saute until the onion becomes translucent. Cut the zucchini into cubes and the mushrooms into strips. Add the ingredients to the stew along with the shrimp and basil. Add spices to taste and 1 cup water. Let it boil on low heat. In another pan, cook quinoa according to package directions. Add the spinach to the vegetable stew, mix well and let it boil for 3 minutes. In a bowl, mix the quinoa with the vegetable and shrimp stew.
