ingredients
- ½ avocado
- 1 egg
- 100 g of smoked salmon
- 4 tablespoons of quinoa
- 1 cucumber
- 1 small onion
- 1 radish
- 5 cherry tomatoes
- salt
- olive oil qb
- 4 fresh basil leaves
- Juice from half a lemon
Preparation
Cook the quinoa according to package directions. Boil the egg, when it is hard boiled clean it and cut it into slices. Cut the avocado into thin slices. Cut the cherry tomatoes in half. Cut the onion. Cut the cucumber into small cubes and the radish into thin slices. In a deep bowl mix the quinoa, onions, cherry tomatoes and cucumbers. Season with salt, pepper and olive oil and mix very well. Top with avocado slices alternating with egg and smoked salmon slices. Season with a splash of olive oil, lemon juice and add the basil leaves.
