Preparation
Put the chopped onion and the diced mushrooms in a pan. Drizzle with 1 tablespoon olive oil and allow to cook. Add the spinach and bring to a boil. Add the diced chicken breast and bring to a boil. After it's cooked, take it out and let it cool, grease the muffin tins with a little oil (wet a napkin and put it over the tins. Beat the eggs with a little salt. Add the eggs to the vegetable and chicken mixture and mix well. Add the chopped chives, the flax seeds and mix well.Put the preparation in the molds and put in the preheated oven until cooked (+/- 15min).
- 6 eggs
