Remove the seeds from the peppers and cut them into thin strips. Cut the zucchini into small cubes. Wash and cut the mushrooms, onion into thin slices and chop the garlic and parsley. Put the olive oil, onion and garlic in an oven-safe pan and let it boil. Add the peppers, zucchini and mushrooms and cook. Beat the eggs in a bowl and season with salt and pepper to taste. Add the eggs to the vegetables and mix well. Bake until cooked to your liking. Served with chopped parsley and cherry tomatoes.
- 1 green pepper
