Spiralize the cucumbers using a spiralizer. Put the cucumbers in a bowl, sprinkle with salt and let the water drain for 15-20 minutes. Season the roast turkey with salt, lemon juice and pepper. Let rest 10 minutes then place on grill. Using absorbent paper, "dry" the cucumber well. Thinly slice the roast turkey, thinly slice the leek, julienne the red cabbage and chop the cilantro. Combine all the ingredients. Season with olive oil and add the sesame seeds.
