Remove the tops of the peppers and remove the seeds. Using a knife, draw and cut out the shape of a scary mouth and eyes. In a wok or non-stick pan, put a drizzle of olive oil, onion cut into half moons, finely chopped leek and grated zucchini. When the vegetables are translucent, add the tuna and mix well. Let it boil for a few more minutes. Stuff the inside of the peppers with the vegetable and tuna mixture. Place in the oven until the peppers are roasted.
- Red peppers
- 1 leek
- 1 can of tuna in its own juice
- 1 onion
- 1 zucchini
- salt and olive oil, to taste
